As I go through different web sites and try recipes if I like them I will post them here, I plan to have a nice mix of diet, kid friendly and my personal fav's.

Yummy Dessert perfect for Spring:
Berry Shortcake!
4 cups of stemmed and cut in 4's Strawberries (unless they are too small then you can just do halves)
2 cups of blueberries
2 cups of Blackberries (unless you don't like these then maybe substitute with an extra 2 cups of blueberries)
2 tbsp of honey
1/4 cup of sugar
1 Can of Butter tastin biscuits (or plain if you can't find these)
3 tbsp of unsalted butter (melted)
Sugar to sprinkle on top of the biscuits.

Put all the fruit in a bowl, add the honey and sugar and cover then refrigerate for an hour, then when you are ready to serve prepare your biscuits by putting them on a baking sheet lined with parchment paper, brush on the melted butter and sprinkle on the sugar, then cook as per the directions on the can.
Once the biscuits are done, let them cool just a few minutes ( I like these while they are still warm) then you cut them open, put the berries on the bottom layer and a big dollop of whip cream then place the top half on the top and serve.
You can use cool whip but I prefer my home made whipped cream which is very easy to make.
Whipped cream:
1 cup heavy cream
1/4 cup of sugar
1 tsp of vanilla
combine these 3 ingredients in a bowl and beat with a hand held mixer until it thickens up, you can tell because you can see the ripples from the beater. That's it!
This is a wonderful, light feeling spring time favorite for my family. I put the fruit and use the juice in the bottom of the bowl as well, it is so delish! why waste any of it!!
My kids don't go for blackberries so I sometimes skip those and just double up on the blueberries.

Okay, I could not find a recipe for this one (that I liked) so I made one from information I found here and there online.
American Pierogie Pie :
4-6 cups of mashed potatoes
1/2 large onion sliced up
1 Stick of butter
1 box of Lasagna noodles.
4-6 slices of american cheese.
I used a 9x12 pan which proved to be a bit much since this is intended to be a side dish so perhaps you could use something smaller, it would help to make it thicker as well. I used a little more onion & butter and it proved to be too much, so I cut back in the recipe listed above.
Prepare noodles as directed.
Prepare Mashed potatoes as directed, I used Bob evans mashed in the containers and I used two of those in this recipe. Some people use instant potatoes, we don't care much for those.
Lightly grease the bottom of the pan, layer in the lasagna noodles, then place a layer of mashed potatoes and break up slices of american cheese and put that on top, layer noodles again, repeat with mashed potatoes and cheese. After you are done with your layers, finish with lasagna noodles on top then place torn up pieces of american cheese. Using a butter knife I made holes to go all the way to the bottom of the pan.
Sautee onion in a pan with 1 tablespoon of butter, once transparent melt the remaining butter into the pan.
Pour butter with onions over the lasagna, shake if necessary to make sure it seeps all the way down into the pan.
Bake in the oven on 350 for about 20- 30 mins.
Then cut it like you would a lasagna and serve!






Mom's Baked Chicken
My mother makes this and tonight I made it myself, came out awesome!
1 Package of Chicken Thighs
3 Potatoes peeled and cubed
1/2 cup of baby carrots, slice long ways
1/2 stick of butter (approximate)
Basil
Oregano
Lightly butter bottom of pan, season chicken thighs with salt, pepper, oregano and basil and place in pan, arrange potatoes so they are not on top of each other and are all laying flat, add carrots. Place approximately one tablespoon of butter on each piece of chicken.
Place in oven for an hour and a half on 350. About half way through check on it and baste chicken and potatoes and carrots. You can remove the skin from the thighs, I did on half of mine. When serving, pour drippings from pan over meat, potatoes and carrots. I usually mash the potatoes and carrots up with my fork and then pour the melted butter drippings over it. YUM! Simple and great!

Ham and Cream Cheese Cresent rolls!
1 can of Buttered crescent rolls
1/2 lb of deli ham ( I use Boars Head)
Cream cheese
This is very simple, fun for kids to help and a big party pleaser. I love making this it is quick easy and delicious.
Open the crescent rolls, lay them out and first put a layer of cream cheese, then take one slice of ham and either cut it length wise or fold it and lay it on top of the cream cheese, then roll it up and bake it for 15 mins until they are golden brown.
Cool and enjoy!





 Done! So quick and delicious!
